This Thai-inspired seafood boil with Smackin’ Seasoning brings a bold, aromatic twist to the classic boil. Juicy shrimp and crunchy bok choy tossed in a buttery sauce infused with garlic, chili, lime, and a hint of sweetness — perfectly balanced with the spicy kick of Smackin’ Seasoning. It’s a flavourful fusion of Thai heat and Southern comfort in every bite.
Thai seafood boil recipe
Ingredients
300g bok choy
1 birds eye chilli (1-2 tbsp of chilli flakes also works)
2 tbsp fish sauce (add to preference)
1 tbsp ginger powder
1 lemon grass stalk
500g cooked seafood (prawns, mussels, crab—whatever you love)
2 cooked corn on the cob
8 baby potatoes, cooked
170–200g unsalted butter
1 chopped onion
4 cloves minced garlic
4 tablespoons Smackin’ Seafood Seasoning
A squeeze of fresh lemon juice
Method
Melt the butter on low heat in a large pan. Add the chopped onion, minced garlic, chilli, ginger powder and smacked lemon grass stalk. Sauté gently for about 5 minutes until fragrant and soft.
Stir in the Smackin’ Seafood Seasoning and let it infuse for 3 minutes on low heat.
Add chopped bok choy and fish sauce - stir well.
Turn off the heat and squeeze in fresh lemon juice. Toss all your cooked seafood, potatoes, and corn into the pan and coat everything in that buttery, seasoned sauce.
